Black tea is the most processed of all the teas and the most popular variety in the UK. The four stage process involves; withering, rolling, oxidation and firing (drying). Orthodox teas are created using traditional methods and usually reserved for loose leaf tea. The CTC method creates a type of tea, most often used in tea bags, this is crushed, torn and curled to create a larger surface area which will colour and brew much faster than a whole leaf. Hence the 30 second teabag brew.
